Crunchy Pizza Loaf
- What you need:
- 1 mini baguette (U.C.)
- 3/4 cup cheese (U.C.)
- 1 1/2 cups (combined) of the following vegetables (thinly sliced):
- mushrooms
- green peppers,
- black olives
- tomatoes
- onion
- jalapeno peppers, etc.
- (vary the amounts, depending on your mood). (U.C.)
- basil, salt, and pepper to taste (U.C.)
- an oven and a knife
- What you do:
- 1. Orient the baguette horizontally, and cut from it the top 1/3. Remove most of the
fluffy, white innards, but without piercing the crust.
- 2. Sprinkle cheese inside, and place the thinly sliced vegetables on top, positioning
the wettest (ie. tomatoes) closest to the top.
- 3. Turn your oven's grill or broiler onto medium-high, and then place your
masterpiece therein.
- 4. Bake until the vegetables have cooked through, and the cheese is bubbling.
NOTE: If you overdo it on the vegetables (especially ones with a lot of water in
them), you run the risk of ending up with a rather limp, tasteless baguette. Don't say I
didn't warn you!
SERVES: One as a meal, three as a snack. Goes best with beer and some good
T.V.
